Serves: 2 people
- 4 fillets of lemon sole
- 75g parmesan cheese
- 75g breadcrumbs
- 25g parsley
- 50g butter
- Tartar sauce (Colemans is a good option or else make your own Tartar sauce )
- Place the fillets on an oven tray lined with tin foil (skin side down) and season them.
- Chop up the parsley leaves and mix in with the parmesan, breadcrumbs, melted butter and one table spoon of tartar sauce.
- Spread the crumb mixture over the fish fillets, drizzle with a little more melted butter and then place the baking tray on a high shelf in the oven for 7–8 minutes at 200° Celsius ( gas mark 6), or until the crumbs have turned a golden brown.
SERVE: with lemon wedges to squeeze over, and the tartare sauce
